For day 7 I decided to try the recipe that I saw on the back of the Hidden Valley Ranch dressing bottle that I used in the buffalo chicken dip earlier this week. It looked quick and easy and I already had all the ingredients so it seemed like the perfect fit for a weeknight meal.
One of the best things about this chicken recipe is the fact that it only requires 5 ingredients. Here is what you need:
4 boneless chicken breasts
1 cup seasoned breadcrumbs
1/4 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
1/2 cup ranch dressing
Preheat oven to 350 degrees. Combine the bread crumbs and cheeses. I mixed them together in a large Tupperware bowl with a lid so I could use it for the next step.
Coat the chicken with the ranch dressing and then coat it with the bread crumb mixture. I put the chicken in the Tupperware bowl with bread crumbs, put the lid on tightly, and shook it until the chicken was well coated. You could also use a zip lock bag, or just drag the chicken through the mixture to coat it. I sprinkled some cheese on top before I put it in the oven. We do love our cheese!
Place the chicken on a baking pan and bake for 35 – 45 minutes or until chicken is no longer pink in the middle.
That’s all there is to it! A quick and easy weeknight meal that tastes great. The chicken was moist and had good flavor. My family really liked it, so this will be on the menu again in the near future!
