31 Meals in 31 Days: Easy Peasy Blueberry Muffins

As a busy working mom, I always made my muffins out of a packet. I always assumed that making muffins from scratch was hard, but I couldn’t have been more wrong! It is actually very easy, uses ingredients that most people keep as staples in their pantry, and tastes soooooo much better than anything you can make out of a packet of muffin mix.

I came across this recipe in a church cookbook I bought many moons ago and decided to give it a try and I am so glad I did! I will never make muffins from a packet again! And these muffins make a great staple for a school lunch the next day. One of these muffins with carrot sticks and apple slices will have your child smiling when they open their lunchbox!

  1. 2 Cups self-rising flour
  2. 1 1/2 Cups sugar
  3. 2 Eggs, lightly beaten
  4. 1 Teaspoon vanilla extract
  5. 1/2 Cup cooking oil
  6. 1/2 Cup milk
  7. 1 Cup blueberries
  1. Preheat oven to 375 degrees.
  2. Mix flour and sugar in medium bowl.
  3. Add eggs, vanilla, oil, and milk. Mix well.
  4. Mix in blueberries.
  5. Pour batter into slightly greased muffin pan, filling cups 3/4 full.
  6. Bake for 15 minutes.
  1. Makes 12 muffins.
